34 minutes of boxing on Wii Sports.....the person that told me this is just a video game and you can't get a workout with it has never seen me boxing.....I was sweating in the first round :)

won 3 out of 5 games at tennis too, and 2 games were skunks :) :)

made Mom's ginger cookies and only had 1 and they are small; the holidays always make me miss mom and dad more than ever; Kelsey doesn't remember ever going to their house for Thanksgiving/Christmas and that make me kind of sad :(

changing this up a bit......

going to use this blog to keep me accountable :)


the last time I was at the doctor he told me exercise should be like my blood pressure pill, never ever miss it :P

sooooo no time like the present :)

30 minutes of  Wii fit is done for the day and the oatmeal is in the microwave :)

and with these nice temps, might take a walk later (will take Ron with me if he will slllloooww down a bit :)

sorry I haven't had any new menus/recipes on the blog but busy trying to get in the routine of the school year. Hopefully I will be able to add somethings in the next few weeks.....

looking forward to cooler fall temps but doesn't sound like that will happen this week....

Menus for August 14-20, 2011

SUNDAY
Scrambled eggs with veggies and bacon bits

No Peek Irish Stew

2 pounds cubed stew meat (the girls like when I use the frozen meatballs)
6 carrots chopped
2 onions chopped
2 cups cubed potatoes
1 tablespoon brown sugar
3 tablespoon tapioca flour (this is to thicken the stew so you can use flour)
1 cup V-8 juice

preheat oven to 250 degrees
In a roasting pan, combine the meat, carrots, onions, and potatoes. In a separate bowl, combine the sugar, flour, and V-8 juice and mix well. Pour this mixture over the meat and vegetables and cover tightly and bake for 5 hours....yes you can use your crock pot for this too :)

Gearing up for the School year to Start......

working on menus, shopping lists, recipes for the upcoming weeks to get through the beginning of the school year.

This is how the week breaks down:

  • Sunday will be "breakfast" for dinner
  • Monday will be beef or pork in some form (I will probably be doing some fish on this day too, but the family won't eat it LOL)
  • Tuesday will be Crock pot meal, this is when basketball season starts, Kelsey has to be out of the house by 5:30 or 5:45 and supper will be ready
  • Wednesday will be chicken in some form
  • Thursday will be "fast food" at home, examples are tacos, home made pizza, or burgers with home made fries
  • Friday will be Crock pot meal again see above but during football season we will both need to be out of the house by at least 5:30 (I am going to be the "plume/gauntlet mom" this year...)
  • Saturday will be some type of soup so that supper is ready when we get home from church......


will be posting menus in a while.......and yes I do hope to keep this up to date but will see what the school year brings LOL :)

Menus for Wednesday, Thursda, and Friday and recipes......

Wednesday-Italian Meatloaf, baked potatoes, some type of frozen vegetable

I will be putting the potatoes in my little crock pot about 10:30. This is trial and error as it is one of the small pots that you just plug in, no settings. I spray my hands with cooking spray and rub the potatoes to keep them from getting too crunchy....

Italian Meatloaf (this recipe has been tried and we really like it)
Serves 6 (I double the recipe and add about an hour to cooking time cause we love leftover meatloaf)

16 ounces lean ground turkey or beef
1/2 cup chopped onion
1/2 cup chopped green pepper
1/2 cup + 1 tablespoon shredded mozzarella cheese
1/2 cup + 1 tablespoon dried fine bread crumbs
1 1/2 teaspoon Italian Seasoning (if you happen to have seasoned bread crumbs,this can be omitted)
1 cup (8 ounce can) Hunt's Tomato Sauce (I use no salt, don't miss it a bit)
1 tablespoon sugar

Spray a slow cooker container with cooking spray. In a large bowl, combine meat, onion, green pepper, mozzarella cheese, bread crumbs, 1 teaspoon Italian seasoning, and 1/3 cup tomato sauce. Mix well to combine. Pat meat mixture into a slow cooker container. In a small bowl, combine remaining 2/3 cup tomato sauce, the remaining 1/2 teaspoon Italian seasoning, and the sugar. Evenly spoon sauce mixture over top. Cover and cook on Low for 8-10 hours. Cut into 6 wedges and carefully remove from container. When serving, evenly spoon sauce over top.

Thursday-Chicken Pot Macaroni (untried but sounds good ), possibly broccoli with this hot dish

Chicken Pot Macaroni (serves 6)

1 can Healthy Request Cream of Chicken Soup
2 ounce jar chopped pimento, undrained
1 1/2 cup hot water
1 teaspoon dried parsley
1/8 teaspoon black pepper
2 full cups diced cooked chicken breast (I use a boneless, skinless breast that weighs about 1 pound)
1 cup finely chopped celery
1/2 cup diced onion
1 1/2 cup frozen sliced carrots, thawed (I am sure you can use fresh in place of the frozen, just make sure they are sliced the same size for even cooking)
2 cups uncooked elbow macaronin


Spray a slow cooker container with cooking spray. In prepared container, combine chicken soup, undrained pimento, and water. Stir in parsley flakes and black pepper. Add chicken, celery,onion, carrots, and uncooked macaroni. Mix well to combine. Cove and cook on LOW for 6-8 hours. Mix well before serving.


Hint: 1. if you have leftovers, purchase a chunk of cooked chicken breast from your local deli
        2. Thaw carrots by placing them in a colander and rinsing them under hot water for one minute
